Lindeman's Bin 45 Cabernet Sauvignon

So first, Cabernet is not the wine I think of when I think of Australian red.  Much more a Shiraz kinda place.  But the 2006 vintage is rather nice, especially when you take in the concentrated fruit flavor from the low levels of rain during that year's growing season. If you are looking for a go-to Aussie winery, big ol' Lindeman's should be on your list.  The winery was founded by a British doctor in 1843 who had studies oenology and viticulture in Europe.  The 330-acre property in New South Wale's Hunter Valley is a lovely sprawling estate, and Dr. Lindeman's wine have received acclaim since the 1860's.  

This wine is matured in French oak barrels, which gives it a mellowness that's bit more extreme than many other Cabs.  It's an easy drinking wine, but I wouldn't call it stellar.  A nice match for game birds, I am not fond of it with steak.  We served it with a lovely bakes Edam appetizer.  The gooey cheese cut through most of the tannins. 

There are supposed to be hints of chocolate and mint in this wine, but I don't get either.  I find it extremely jammy and smooth, nice qualities for sipping.  Don't expect a big mouthful of complexity: This wine is straight-forward.  I'd drink it again with the appetizer, but I'd pick something with more body to go with a main dish.
