Preserving bottles
A friend asked me the other day if I store my opened bottle of red differently than white. Actually, I don't. I refrigerate any wine that I don't finish (which is most bottles these days) in the fridge for up to five days. OK, and I also use the vacuum seal cork as well. Does it help? Well, I can still drink the wine for a few more days. But, no I don't think it tastes as crisp as when I opened the bottle.
The problem occurs when I want to drink a glass of the red. Occasionally, I remember to pour a glass about 20 minutes before I want to drink it. Usually, I don't. That's why I also like Reidel's stemless wine glasses. I can hold the glass in my hand without feeling utterly uncouth and sip very slowly as the wine warms to the point I can actually taste the subtleties.
After four to five days, the wine gets moved into the cooking queue -- not as robust as it was originally but still relatively good when heated.
