Bring on the bison

I have a confession: I'm a carnivore.  I grew up in Texas, and we know something about beef, y'all.  But I began to worry about my family's meat consumption a few years ago. Too much fat and cholesterol, even if that rib-eye was cooked to perfect tenderness. So we gave it up. For a while.

Then I found a ranch with grass-fed beeves.  After doing more research, I learned eating beef wasn't bad for me, eating grain-fed beef from feed lots is.  I nearly cried as I bit into my sirloin.  Meat tastes good.

When we moved to New Mexico, I waived good-bye to my affordable grass-fed beef.  For months, we once again were on beef rationing.  Then I found Whole Food's bison.  Bison is actually leaner and more nutritious than beef.  More importantly, it tastes just as good.  Tonight, to celebrate the 4th of July, we're grilling bison shoulder steaks, Texas-style.  This carnivore sure is loving her Independence Day.
